When I lived in Moncton, New Brunswick , I wanted to eat Korean style bun.
But I never found Asian bakery store. Then I made cupcake at home with Mochiko.
Mochiko can be found in Asian markets, it is a white flour, in a one pound box.
You can use it for a lot of other recipes.
The skin of cupcake is crispy, inside is soft and chewy.
If you don’t want red bean past, you don’t have to be.
It is very easy and delicious.

Ingredients

  • 1 (1 lb) box mochiko
  • ½ cup brown sugar
  • 1 teaspoon baking powder
  • 2 eggs
  • 2 and 1/2 cups milk
  • 300g sweetened red bean paste
  • ½ cup almonds (optional)

Directions

  1. Preheat the oven to 375ºF.
  2. Prepare large bowl and cupcake pan.
  3. Put the beaten eggs, milk, Mochiko flour and baking powder, sugar in the bowl.
  4. Mix until the flour is fully incorporated.
  5. Put it in cupcake pan.
  6. The red bean is placed between scoops of cupcake batter and almonds on top. (I get about 24 cupcakes out of this recipe).
  7. Place in the oven and bake for 40 minutes or until you see the top change well-browned.
  8. Enjoy your snack with coffee or tea !!
