Bindaetteok (also called nokdujeon or nokdu jijim; literally "mung bean pancake") is a variety of jeon, a Korean style pancake. It is made of ground mung beans, with green onions, kimchi, ground pork or peppers cooked in a frying pan.

Health Benefits of Mung Beans
Mung beans are rich in the following nutrients:
Protein, vitamin C, folic acid, iron, zinc, potassium, magnesium, copper, manganese, phosphorus, thiamine.

Mung beans are high in fibre, low in saturated fat, low in sodium, and contain no cholesterol.  Because of the wide range of nutrients contained in mung beans, they offer a whole host of health benefits for the immune system, the metabolism, the heart and other organs, cell growth, protection against free radicals, and diseases such as cancer and diabetes.






Mung beans pan cake (Bindaetteok)


Ingredients

1 pound(400~500 g) peeled mung beans
2 cup chopped cabbage kimchi, 
1 pound ground pork (add 1 tsp salt, ½ tbs sesame oil, 1 tsp black pepper 1 tbs minced garlic)
200 g mung bean sprouts 
½ cup chopped green onion
¼ cup chopped red pepper
 1 tea spoon salt



Directions


  1.  Soaked peeled mung beans in cold water over night.
  2.  Pour water until the mung beans are completely submerged and Blend soaked mung beans until it turns creamy.
  3.  Wash and drain mung bean sprouts in cold water a couple of times until they’re clean.
  4. Put them in boiling water. Cover the pot and bring to a boil over high heat for 2 mins.
  5. Rinse in cold water, strain, and set aside.
  6. Place 1 pound ground pork into a big bowl. Add 1 tsp of salt, ½  tbs of sesame oil, ½ ts of ground pepper and mix it, and set aside.
  7.  Chopped cabbage kimchi.
  8.  Put them in creamy mung beans. Add 1 cup flour and chopped green onion.
  9. Heat up a frying pan over medium high heat and add about 5 tbs canola oil(or vegetable oil).
  10. Place the mung beans mixture on the pan and spread it thinly and evenly.
  11. Decorate sliced red pepper on mung beans mixture. 
  12. Cook it until golden brown and crispy. Turn it over one more time.
  13. Transfer it to a serving plate.

Transfer it a serving plate.
